Sauteed Mussels With Garlic And Herbs

1kg Mussels (already cleaned)

1/2 a lemon

6 tbsp olive oil

1 garlic clove chopped

2 scallots chopped

1 tbsp chopped fresh parsley

1/2 tsp sweet paprika

1/4 tsp dried chilli flakes

parsley sprigs to garnish

 

Heat oil in pan, add mussels and cook, stirring for about 1 minute. Remove from pan. Add scallots and garlic and cook, covered, over a low heat,for about 5 minutes, until soft. Stir in the parsley,paprika and chilli, then add the mussels with any juices. Cook briefly. remove the pan from the heat, cover and leave for 1 to 2 minutes to let the flavors mingle. Serve garnish with parsley.
