Fresh Blue Manna Crab Linguine

Serves 4

250grms Fresh Crabmeat

45 mls tbsp olive oil

1 Handful Fresh Flat leaf Parsley roughly chopped, plus extra to garnish

1 Clove of Garlic,crushed

350grms Italian plum tomatoes,peeled and chopped

60-90 ml dry white wine

500 grms fresh or dried linguine

Salt and Ground black Pepper


1. Shred Crabmeat

2. Heat 30mls of the oil in a large pan. Add the parsley and garlic, with salt and pepper to taste, and fry for a few minutes until the garlic begins to brown.

3. Add the tomatoes, pounded crabmeat and wine,cover the pan and simmer gently for  15 minutes, stirring occasionally.

4. Meanwhile, cook the pasta until al dente. Drain Well,reserving a few spoonfuls of the cooking water.

5. Return the pasta to the clean pan, add the remaining oil and toss quickly over a medium heat to coat the oil. Add the crab mixture to the pasta and toss again, adding a little o th reserved pasta water if you think its necessary. Adjust the seasoning. Serve in warmed bowls, sprinkled with parsley
